Setup buffet stations. Help control portions and assist diner flow through.
Prep and cook any hot buffet items. Meet demand for buffet items as they are drawn down.
Replace buffet items as necessary. Communicate needs of buffet stations to kitchen crew.

Cut up and portion pineapple, berries, grapes, oranges or buy clementines (mandarins).
