PROJECT EZRA 2018

Dear Project Ezra Supporters & Volunteers,

Project Ezra is a shared tradition between Temple Shir Tikvah in Winchester and Temple Isaiah in Lexington, where members of both congregations prepare and deliver Christmas meals to elderly residents and families in need. Last year, we prepared, assembled, and delivered 300 holiday dinners for families in Arlington, Bedford, & Lexington and we expect to increase our meal delivery count to 350 this holiday season! 

We added “door greeters” to the list of ways to participate in this event. We ask that as you bring in the food you signed up for, please consider signing up to greet folks at the front door for a 30 minute shift. Whether you are bringing food or looking for other ways to be involved, welcoming & helping people as they walk in with arms full of food is a wonderful way to participate. We are asking for 2 people to sign up for each shift. Please consider sticking around as we work towards fulfilling the commitment of Project Ezra.  

A small change this year  -- We are focusing on asking people to prepare homemade items so we are not asking for frozen peas or gravy. We plan to use donations to purchase those items.  We recognize these items are convenient for those heading out of town, and we hope you can find another way to participate. For example, you can make a donation (info below), bake cookies in advance and freeze them, or make cranberry sauce (and deliver to Temple Isaiah on Saturday or Sunday, delivery times will be sent out closer to the date).

It’s easy to help in advance and/or on the day of prep! Below is a list of how you can get involved.  

  • Prepare a component of the meal (turkey breast, stuffing, peas, cranberry sauce, potatoes, gravy, fruit salad, or cookies) at home and bring the item(s) to Temple Isaiah on Monday, December 24

  • Carve the turkeys at Temple Isaiah

  • Deliver the meals

  • Make a financial contribution (details below)

Who can help?

  • Adults,

  • Children (all ages welcome) to decorate bags and join their families in assembling & delivering meals

  • High school students can receive community service credit for volunteering

Event schedule:

Monday, 12/24 at Temple Isaiah (55 Lincoln Street, Lexington -- Social Hall/Kitchen)

7:00 a.m. - 9:00 a.m. Bring food to Temple (turkeys should be delivered by 8:00 a.m.)

9:00 a.m. - 11:00 a.m. Pack meals into containers; kitchen clean-up

9:00 a.m. - 10:30 a.m.  Bag decorating & write note cards

11:00 a.m. - 11:30 a.m. Assemble food bags

11:30 a.m. Arrive to pick up meals for delivery (delivery takes about 1 hour)

--Recipes-- 

ROASTED POTATOES

This recipe makes one unit

Ingredients

  • 5 pounds Yukon gold potatoes cut into large chunks
  • 4 sprigs fresh rosemary (dried rosemary is fine, or 1-2 teaspoons of dried basil and parsley)
  • freshly ground black pepper
  • Extra-virgin olive oil

Directions

Preheat the oven to 375 degrees F.

Put the cut potatoes onto baking sheets. Roughly tear the rosemary (or your choice of seasonings) and scatter it over the potatoes; season with pepper and drizzle with olive oil. Toss the potatoes well to mix all the flavors and put them in the oven. Remove after 30 minutes and turn them over to ensure even cooking. Continue to roast until they are browned and cooked through, about 30 to 40 minutes more. 

NOTE: Do not overcrowd the baking sheet or the potatoes will steam instead of roasting.

THANKSGIVING STUFFING

(Serves 8; PLEASE DOUBLE THIS RECIPE TO MAKE 1 UNIT)

Prep time:  10 mins  Cook time:  40 mins

Ingredients

·   4 tablespoons butter or non-dairy margarine to keep it dairy-free

·   1 medium onion, chopped

·   3 celery stalks, cut crosswise in ¼” slices

·   ½ teaspoon kosher salt

·    1 teaspoon ground sage

·    1 teaspoon dry thyme

·    10 cups dried unseasoned bread cubes (found in the bread section at the grocery store)

·    1½ cups chicken or vegetable broth

·     1 egg

·     Optional garnish: ¼ cup fresh parsley, chopped

Instructions

1.  Preheat oven to 350 degrees F. Melt butter in a large pan. Saute onions, celery, salt, sage, and thyme for 5 minutes on medium heat. Turn off heat. Add bread cubes and gently stir them into the onion mixture. Slowly pour chicken broth over the bread cubes folding everything carefully so the bread cubes do not break apart too much. In a small bowl, gently whisk the egg and add it to the stuffing mix. Continue to fold everything until the egg is incorporated. Place stuffing into a small disposable aluminum pan and bake uncovered for 40 minutes or until nice and toasty on top.

CRANBERRY SAUCE

 This recipe makes one unit

makes 10 cups     active time 5 min; total time 20 min

Ingredients

  • 4 cups water
  • 4 cups sugar
  • 4 --12-oz bags fresh or frozen cranberries (12 cups)
  • 3 lemons seeded & sliced (optional)

Instructions

Rinse and de-stem cranberries. Bring water and sugar to a boil, stirring until sugar is dissolved. Add cranberries & lemon slices, return to boil. Reduce to simmer, and boil gently for 10 minutes, stirring occasionally, until berries just pop. Pour into a bowl and cool.

Note: Cranberry sauce may be made 3 days ahead and chilled, covered.
