Summer Meal Prep Roasted Veggie Salad in a Jar Party

We are so excited that you will be joining us on our Healthy Living Revolution and that YOU want to TAKE HEALTHY BACK! This week we will be having our Meal prep SUMMER SALADS IN A JAR PARTY!  It's such a wonderful way to get some healthy meals already prepped and ready for your week! 

This one is a little different.  We will have 3 recipes and salad dressings will be home made and we will include a summer roasted veggie salad...yummy

Directions:

  • All items should be organic to the extent possible
  • Bring all items already chopped/sliced/prepped
  • Bring your item in a serving bowl/dish
  • Mason Jars:  Size is up to you! Quart size is usually good for a meal.  Pint sized is good for a side salad.  If you are buying NEW mason Jars....YOU MUST WASH THEM FIRST! (Trust us...they smell nasty when you first open them! Wash 'em before you bring 'em!)
  • We can have mason jars available for purchase of $2 each....but please let us know so that we make sure to have enough!
  • Plan on making about 2 Quart sized mason jars. Or the equivalent in Pint sized.

Avocado - 5 (2)

Ripe and sliced/cubed with lemon juice sprinkled on top

 

Beets - cooked

Can buy 1 large pkg from Costco or 2-3 smaller packages. Please slice.

 

Black Beans (3 cans) (2)

BPA free - please rinse ahead of time

 

Broccoli Florets - 1 large from Costco or 3-4 Small

Please cut into small florets

 

Carrots - Shredded 3 bags

 

Snap Peas halved (2)

 

Cherry Tomato - 3 Costco Sized

 

Roasted Corn 2 bags

Frozen

 

Cucumbers - About 9 lbs - Quartered

Make sure they are bite sized

 

Garbanzo Beans - 4 cans

Please rinse and put in bowl

 

Hard Boiled Eggs - 10 (2)

Please cut into quarters or slice

 

Jicama Chopped into small bite size pieces (3)

 

Lettuce/Mixed Greens/Power Greens - 3 Costco Sized

 

pomegranate arils - 4

Can buy in a package

 

Radishes 4 packages/bunch

Can either be pre-sliced from store or bought whole, but please slice before bringing

 

Sweet Peppers - 12 Diced

Red and yellow

 

Quinoa (cooked) - About 3 cups

 

Red Cabbage Shredded (2)

Unsalted Cashews 2 Cups

 

Chopped Green onions about 20

 

Peanuts Chopped 2-3 cups

Can be roasted but unsalted
