Firedancer Coffee Consultants: Professional Coffee Education, HACCP – Team Lead and Tea Craftsman™ Certification Programs

Firedancer Coffee Consultants presents the new SCA Education.  The Coffee Skills Program touches on all facets and levels in specialty coffee.  Also offered is the new tea education; Tea Craftsman Levels 1 & 2.  These educational and training offerings range from 3 to 5 days, depending on the curriculum.

TUITION INCLUDES: Student handbook, class materials, certificate written and practical exams, lunch, and snacks. 

TUITION DOES NOT INCLUDE:  Airfare, Transportation, Lodging or other Personal expenses.

PAYMENT AND CANCELLATION:  After you have registered for a course, we consider your registration to be a firm commitment for you to attend. Last-minute participant substitutions are difficult to arrange, although we understand emergency situations may arise that will affect your attendance to programs offered by Firedancer. We have established the following policy in case of course cancelation:

  • If cancelation is made over 15 days before the program start date, 100% of the tuition, less a 10% cancelation fee, will be refunded, or 100% of the tuition is transferable to another program/date.
  • If cancelation is made within less than 15 days prior to the program date, the entire tuition is non-refundable and non-transferrable.

Firedancer reserves the right to cancel or reschedule events as necessary.  In such a case, this will occur 2 weeks prior to the start of the event.  Tuition may be refunded in full or transferred to a future seminar or course; your choice. In no event shall Firedancer Coffee Consultants be liable for any cancelation or change penalties assessed by an airline or hotel as a result of course date changes or cancelations.

NEW CURRICULUM:  Coffee Skills Program Modules and Levels

The program consists of six different modules:  Introduction to Coffee (available at one level) and five specialist modules, Barista Skills, Brewing, Green Coffee, Roasting, and Sensory Skills.

Each of the specialist modules is available at three different levels, with points attached at every stage. You may choose the modules that fit your interests and needs. Once you have achieved 100 points, you will be awarded the SCA Coffee Skills Diploma.

INTRODUCTION TO COFFEE:  Learn about coffee’s journey from its origins in Ethiopia to the major commodity it is today. From growing the cherries through grading, roasting, and brewing, this module provides an overview of the coffee value chain.

BARISTA SKILLS MODULE:  Learn the practical skills you need behind the espresso bar: learn how to set your grinder, milk techniques and latte art, health and safety, customer service, and basic business practices.

SENSORY SKILLS MODULE:  Learn about the essentials of sensory evaluation in a practical and interactive manner. Sensory Skills investigates the way we perceive what we taste, how to evaluate coffee’s natural characteristics, and implementing this knowledge in business.

FOUNDATION – TEA CRAFTSMAN LEVEL 1:  Foundations will focus on building the foundations of tea history, culture, production and professional evaluating the 6 basic types of tea (white, green, yellow, oolong, black, & dark). In this part, you will come away knowing history and tradition; growing, cultivation and production; post-production processes; how tea is graded; delivery methods for consuming tea; differences between specialty and commodity tea and how to cup and evaluate tea. Foundations will focus on building the foundations of tea history, culture, production and professional evaluating the 6 basic types of tea (white, green, yellow, oolong, black, & dark). In this part, you will come away knowing history and tradition; growing, cultivation and production; post-production processes; how tea is graded; delivery methods for consuming tea; differences between specialty and commodity tea and how to cup and evaluate tea.

INTERMEDIATE – TEA CRAFTSMAN LEVEL 2:  In addition to the knowledge and activities from Foundations, there will be an in-depth exploration of the traditional origin countries with a review of the cultural influence, brewing methods and production methods, as well as a cupping and evaluation of teas from each country.    You will then onto reviewing and tasting the most common herbal/tisane “teas” sold in the US as well as, botanical ingredients that are used in creating custom tea blends. We will discuss how tea is scented and how this differs from flavored teas. We will review how to properly evaluate flavors for tea and how to apply flavoring to teas. Finally, we will talk about proper blending methodology for creating custom blended teas.
