Categories for cook-off entries are brisket and/or chili. Cook-off tasting begins at 3:00 p.m. and ends at 5:00 p.m. One winner in each category will be announced at 5:15 p.m.
Each competitor will be given a 10x10 space for their serving station (the size of a typical pop-up canopy). Teams are responsible for providing their own tables, canopies (if desired), serving utensils, extension cords, etc.
Each competitor will be responsible for serving their entries to the crowd. PTA will provide Styrofoam sample cups, sporks, napkins and power source.
Cooking teams may set up and start cooking at 10:00 a.m. For those who would like to arrive a little early, the grounds will open at approximately 9:00 am. We will try to accommodate the special needs of any team, but arrangements must be made in advance.
Dishes do not need to be prepared on site. Participants are required to provide their own logistics if they choose not to prepare on site.
Only small portable cooking equipment shall be used on site. You are responsible for removing any coals used.
Each team is encouraged to prepare enough food for 150 (2 oz) sample-sized, servings.
Brisket meat must be used for BBQ competition entry.
Chili meat may include wild game, e.g., rattlesnake, raccoon, armadillo, etc. No roadkill ;)
Judging will be conducted by our panel of judges as well as a 'most tickets received from the crowd' category. Tickets will be counted at the end of the event and a winner declared. Competitors must provide their own container to collect their vote tickets from the crowd. Serving station decorations are encouraged but not required.
