Happy Hour Quiche Making Class

Dear Club Members, Friends of the Club, and Friends of Kirstin,

Please join us for our first virtual Happy Hour Cooking Class with Kirstin at 5pm, Saturday, July 25, 2020.  Learn to make super easy quiche that will be ready to eat tonight for your dinner or the next day for your brunch.  Kids are welcome!  They will love this.

This is a donations class for our amazing Cleveland Park Club.  We really appreciate you helping us get through the pandemic when the club has been able to operate fully.  The event is free, but if you want to make a donation you can send it to my Venmo and I will present the club with a check: @Kirstin-Leighton-Lucas or to donate in another way contact [email protected]

There is no need to cook with us, but yet you can, as this is going to be super easy!

Ingredients List:

  • 1 Pie Crust – You can use pre-made pie crust.I prefer the kind that comes in a roll that you place in a pan yourself, but anything will do. Whole Foods sells one as does Pepperidge Farms.(Make sure to take this out and let it come to room temp before class starts; preheat your oven to 425.)

If you like to make crust though I think this one that is super easy and quick and uses butter instead of shortening:


(Tip – you want to precook the crust if you are making handmade crust so you are ready to go.)

  • 4 eggs
  • 2-3 cups Cream, half & half or milk, lactose free milk
  • Herbs if you like them – I prefer chives, but anything will do
  • Salt and pepper

Now here is where we have fun:

What do you want to put in your quiche? 

Some good combos:

  • New Year’s Eve Quiche: Sharp cheddar white or yellow, truffle oil, grated parmesan, and chives
  • Veg and cheese – broccoli and cheddar, mushrooms and swiss – Veg tip – saute your veg ahead of time in some olive oil or canola oil, salt, pepper, with a little onion and/or garlic
  • Mediterranean – feta, sun dried tomatoes, olives, artichoke hearts, oregano
  • Any cheese
  • Any meat (cooked already like crispy bacon or a meat you can dice)


So please grab your favorite beverage, pick up a spatula (I promise it won’t hurt), and join us!
