Corpus Christie House is in need of volunteers to help provide breakfast casseroles to be served at the Interfaith Sanctuary on Tuesday mornings. The egg casserole recipe is provided below. This is a great opportunity for students to earn service hours by preparing and cooking breakfast casseroles over the weekend and delivering to St. Mark’s school on Monday morning at 8AM. There will be a cooler outside of the school entrance to place casseroles. We are also in need of a volunteer to deliver casseroles to Corpus Christi House on Monday between the hours of 9:30-1:30PM.

Egg Casserole Recipe:
4 Cups milk
1 onion, chopped
1 Tbsp. dry mustard
Set aside. Grease 9x13 aluminum pan. Spread bottom with:
2.5 Cup bread, cubed
Pour egg mixture over bread. Sprinkle with:
1/4 pounds Monterey jack cheese, shredded
1/4 pounds cheddar cheese, shredded
3/4 pound sausage or ham, cooked & chopped
Cover and chill overnight. Uncover and bake at 350ºF for 1 hour or until browned & puffy. Let cool and refrigerate. The Interfaith Sanctuary will reheat on Tuesday morning.
**PLEASE DO NOT DELIVER AN UNCOOKED CASSEROLE, IT MUST BE FULLY COOKED AND COVERED WITH ALUMINUM FOIL: It is best to assemble the casserole on Saturday, refrigerate over night, cook Sunday, let it cool then refrigerate. Deliver the casserole chilled and fully cooked. Cover the casserole with aluminum foil. Do not use a plastic top as it will not fit well in the cooler. The casseroles will be reheated on Tuesday morning for breakfast.
Note: You can use any cheese and the protein could be bacon, taco flavored beef or chicken. You could also replace the protein with roasted vegetables.
